Watermelon and cheese?! It may sound like a bizarre combination, but trust me, this sweet and savory dish is uniquely delicious. This summer salad can be whipped up in less than 10 minutes and is sure to cool you down from the Texas heat! Serves 6-8.
Ingredients

6 cups watermelon (cut into chunks)

1-2 seedless English cucumbers (cut into chunks)

½ a red onion (thinly sliced)

¾ cup feta cheese

Olive oil (drizzled to taste)

Balsamic Vinegar (drizzled to taste)

Salt to taste (flaky salt is extra delicious)
Optional

Fresh herbs – basil and mint are my favorites! (chopped for garnish)
Instructions
Combine the watermelon, cucumber, onion, and feta cheese, then toss. Top with olive oil, balsamic vinegar, salt, and herbs. Enjoy soon after assembling!
